Ginger Sweet Potato-Pecan Scones w/Sweet Whipped Butter

I have to admit I love scones!  And, was thrilled to work on a Sweet Potato rendition of some of my favorite flavors.  This scone was truly a labor of love.  The blend of unique spices and flavors really made it worth the effort it took to create them!  And, smothering them warm with a sweet whipped butter just melts in your mouth!   

Anyway, enough gabbing....here's the recipe.  Enjoy!

1 ½ cups plain flour; sifted and divided
¼ tsp salt
1 tsp baking powder
1/4 cup sugar plus 1 tsp
¾ cup mashed sweet potato; cooked and cooled
2 tbs butter; softened
1 egg; lightly beaten
1 tsp dried marjoram
1 tsp fresh ginger zest
½ cup Colby Jack/Monterey cheese blend; shredded
½ cup chopped pecans; toasted
1 tbs honey
1 tbs heavy cream or milk.
Sweet whipped butter

1. Preheat oven to 400 degrees. Spray a 10” baking pan with cooking spray and set aside.


2. In a medium mixing bowl sift together 1 cup flour, salt and baking powder. Stir in sugar.


3. In another mixing bowl mix together sweet potato, butter and egg. Stir flour in 3rds to sweet potato mixture, add in marjoram, ginger zest, honey, pecans and cheese. Stir well to mix.


4. Slowly add in additional ½ cup sifted plain flour until dough becomes soft and easy to handle. Turn dough out onto prepared pan. Cut into 8 equal wedges. Brush top of dough with cream or milk. Sprinkle with 1 tsp sugar.


5. Bake for 20-22 minutes or until slightly brown on top



6. Serve warm with sweet whipped butter. Yum! Yum!

Roasted Sweet Potato-Basil Pizza

I love to invent new pizza creations...This is my latest creation-Roasted Sweet Potato-Basil Pizza.  I surprised myself with this creation!  It was delicious!  My whole family loved it, so I believe we will be having this one again!

Here's the recipe.  Enjoy!

1 medium sweet potato
1 tsp basil leaves
½ tsp coarse sea salt
1 tbs olive oil
1 6.5 oz pkg pizza crust mix
½ cup hot water
1 1.25 oz pkg garlic alfredo sauce mix
1 tbs butter
¾ cup whipping cream
1 medium sweet pepper; diced
1 cup shredded mozzarella cheese

1. Heat oven to 450 degrees. Spray a 10” pizza pan with cooking spray and set aside.

2. Cook sweet potato in the microwave for about 2 minutes (enough to soften so it can be cut). Remove from oven and cut skin away from potato. Cut into bite size pieces and place in a glass baking pan. Sprinkle sea salt over potatoes and toss to coat. Sprinkle basil leaves over potatoes and toss again. Pour olive oil over potatoes and toss again until potatoes are coated. Place pan in oven and cook for 12-15 minutes or until potatoes appear to be done.

3. While potatoes are cooking begin preparing pizza crust. Pour contents of pizza dough mix into a medium mixing bowl. Add hot water, stir to mix. Cover and set aside.

4. For sauce: Melt 1 tbs butter in a small sauce pan over low heat. Stir in whipping cream and contents of sauce packet. Stir continually until sauce thickens. Turn down on warm. Stir occasionally to keep from sticking.

5. Spread dough onto prepared pizza pan. Place in oven and pre-cook for 5 minutes. Remove from oven and spread alfredo sauce, sweet pepper, and roasted sweet potatoes over pizza. Cover pizza evenly with mozzarella cheese. Return back to oven and bake for 12-15 minutes or until pizza is browning and bubbly on top.

Servings: Approximately 6-7

Happy Birthday Chris!

Here's an interestingly; creative dessert for you.  My son loves Krispy Kreme doughnuts.  So, for his birthday we had Krispy Kreme Doughnut Sundaes. 

Ingredients:
1 glazed KK doughnut
2 scoops chocolate chip cookie dough ice cream
1 tbs cool whip
drizzle of caramel syrup
1 cherry on top

This was really good!  Be careful it could be addictive!

My Birthday!


My birthday is this weekend!  Yay for another year, I am blessed!  My family and I celebrated tonight. 
On the menu?
Shrimp Creole & Rice, Salad, Garlic Toast, Corn Muffins, Kiwi Cake, Chocolate Cake and ice cream!  Yum, Yum!  Our family get togethers always center around good food and good times! 
I love my family, they are the best!

I'm here!

Well, I finally got around to creating my own cooking blog.  My husband and I both love to cook and be creative in the kitchen.  He does more of the meal cooking, I do most of the playing with food. My goal is to show you how much fun and creative cooking can be by keeping you posted about mine and my husband's love for food and love for creating meals. We love to share our love for cooking with our friends and family.  It is the tie that bonds people together.
